初夏の旬ということでヤマメを頂きました。

捌くのが上手くいかなかったものは
焼いたときに皮がグリルに引っ付いてボロボロになってしまいました。

久々のヤマメはうまいです。
It’s been a while since I’ve had yamame, it’s delicious.
自分で捌いたのも相まって格別なうまさでした。

子供たちも喜んで食べていました。

Memo: Generally, river fish sashimi is not eaten very often
When you think of Japan, you think of sashimi.
Many Japanese people like sashimi.
The only fish that are commonly eaten as sashimi are sea fish.
I looked into the reasons.
Why river fish are not eaten as sashimi
There are two reasons.
They smell fishy
They have parasites
They smell fishy
This is due to the environment in which the fish grew up.
If the water quality of the river is poor or there is a lot of dirty mud, the smell seems to be transferred to the fish.
Parasites
It seems that parasites in river fish are stronger than those in the sea.
Also, while there are about three types of parasites that are harmful to sea fish, there are more than nine types of parasites that are harmful to river fish.
In most cases, the prevention method is to not eat raw fish.
How to eat river fish sashimi
There seem to be several ways to eat it safely.
Farmed fish
Fully farmed river fish do not have parasites.
So it is safe to eat.
“Trout salmon” is a good example.
Freeze thoroughly
Storing it below -20 degrees for more than 5 days will kill the parasites.
However, since a typical household freezer cannot go below -20 degrees, you need to use a commercial freezer.
Even if the specifications of the freezer say below -20 degrees, it seems that the temperature may not actually drop, so be careful.
Eat at a restaurant around Lake Biwa
People around Lake Biwa have been eating lake fish as sashimi for a long time.
This is because there are few vectors for parasites in the lake and the fish is cooked properly before being served.
It seems that it is safe to eat if you eat it at a proper place.
Summary

I found that it is safe if it is cooked in the right way in the right place.
I’m not good at it, so I would like to eat it at a professional restaurant.
